  • 2 tbsp of Extra Virgin Olive Oil
  • 2 red bell peppers or any of your choosing
  • 1 cup of carrots diced
  • 1 medium onion diced
  • 3-4 garlic cloves chopped
  • 1 cup of peas frozen or fresh
  • 2 cups of rice long or medium grain
  • 1 12 oz package of sausage kielbasa or any other smoked sausage, sliced
  • 2-3 tbsp of tomato paste
  • 32 oz 4 cups chicken or vegetable stock
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Fresh parsley chopped to garnish

Instructions
 

  • In a cast iron skillet, over medium-high add olive oil. After olive oil begins to heat up, add sliced sausage until browned on both sides. Remove from heat and set aside.
  • Add diced peppers, onion, garlic and carrots and sauté until onion becomes translucent.
  • Return sausage back into the skillet with peppers, onions, garlic and carrots.
  • Add 2 cups of rice, mix well and let sauté 3-4 minutes until rice starts to look a little toasty. Add in seasonings and tomato paste. Mix well.
  • Pour 4 cups of broth and add in peas. Mix well. Cover skillet. If you have a lid for your skillet, place it on there now. If not, cover your skillet with aluminum foil tightly.
  • Place heat on low and let simmer until broth is completely absorbed. About 10-15 minutes.
  • Turn heat off and let sit for 5-8 minutes with lid still on to let rice completely cook.
  • Garnish with chopped parsley.
  • Serve with a garden salad if you would like.
