Orange Almond Scones

Equipment

  • 1 cooking sheet
  • 1 cooling rack
  • 1 sheet of parchment paper

Ingredients
  

  • 2 cups of all purppose flour
  • cup of granulated sugar
  • ¼ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp sea salt
  • 6 tbsp butter unsalted, frozen
  • 3 tbsp orange zest
  • ½ cup freshly squeezed orange juice
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp of almond extract
  • 1 cup of sliced almonds toasted
  • Orange glaze
  • cup of powdered sugar
  • 1 tbsp orange zest
  • ½ orange freshly squeezed
  • Egg Wash
  • 1 egg whisked
  • 1 tbsp cold water

Instructions
 

  • Preheat oven to 400℉.
  • In a mixing bowl, put all dry ingredients: flour, sugar, baking soda, baking powder, and sea salt.
  • In another bowl, grate 6 tbsp of frozen butter. Place the bowl in the freezer with the grated butter until ready.
  • In a separate bowl, add orange zest, orange juice, eggs, vanilla, and almond extracts. Mix well and set aside.
  • In a small skillet, place 1 cup of almonds on low heat until you start to smell the wonderful nutty aroma and until the almonds are golden brown. Shut the heat off and set it aside.
  • Pour frozen butter into your dry ingredients bowl and mix well. The flour mixture will look crumbled.
  • Add wet ingredients to this mixture and mix well.
  • Add almonds and continue to mix.
  • Place dough on a well-floured surface and mix into a ball. Using a rolling pin or your hands, shape into a flattened circle about 1 ½” thick.
  • Cut into 8 triangles.
  • Place scones on a cooking sheet lined with parchment paper.
  • Whisk 1 egg in a small bowl with 1 tbsp of cold water. Using a basting brush, brush egg wash on each individual scone.
  • Bake for 15-20 minutes until golden brown.
  • In the meantime, prepare the orange glaze by placing all ingredients: powdered sugar, orange zest, and orange juice into a small bowl and mix well. Set aside
  • Remove from the oven and place on a cooling rack.
  • Using a spoon pour orange glaze over the scones and set aside until cool.
