Equipment

  • 1 9-10" Bundt Pan

Ingredients
  

  • 3 cups of all-purpose flour
  • 1 cup of sugar
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 1 tsp of ground cinnamon
  • 1 tsp of ground nutmeg
  • 4 eggs
  • 1 ⅓ cup of any cooking oil
  • 1 ½ tsp of vanilla extract
  • 1 cup of crushed pineapple 8 oz
  • 2 cups of mashed ripe bananas
  • 1 ½ cups of walnuts chopped

Instructions
 

  • Preheat oven to 375℉.
  • Grease a bundt pan with butter. Set aside.
  • In a large mixing bowl, combine all dry ingredients: flour, sugar, baking soda, baking powder, salt, cinnamon and nutmeg.
  • In separate bowl, combine wet ingredients: eggs, oil, vanilla extract, pineapple, and bananas.
  • Combine wet ingredients into bowl with dry ingredients and mix well.
  • Using a spatula fold in chopped walnuts.
  • Fill bundt pan with this batter.
  • Bake for 60 minutes or until inserted toothpick comes out clean.
  • Remove from oven and let sit until warm.
  • Remove Banana Nut Bread from bundt pan and let sit on a cooling rack until room temperature.
  • Place on a dish and sprinkle with confectioners sugar.
  • For a different topping, mix ½ cup brown sugar, ⅓ cup all purpose flour, ¼ cup butter, cubed and 1 tsp of ground cinnamon. Mix well and sprinkle over batter before baking.
