Spice up your game day with this quick and easy snack, a rich baked Tomato and Goat Cheese Dip, the greatest invention since sliced bread (yes, you heard it right, even better than sliced bread!).
Superbowl Sunday is coming up in just a few days. While I will admit that I am not an avid football game watcher, sorry, our go-to sport is soccer. Let’s go Portugal!! I do enjoy watching the Superbowl, mainly to watch some men in tights, LOL, watch all the new commercials and catch up on all the hype of the half-time show! Oh, did I mention the food? Yes, the food is the best part. Any excuse for me to make some yummy snacks, sign me up!
Your typical game day snacks consist of the usual Pigs in a Blanket, Hot Wings, Nachos and Dip, etc., but what if we change it up a little this year? Why not make something new? Something maybe not so typical?
Picture this, ripe juicy tomatoes, paired with tangy goat cheese and fresh garlic, blended to create a party in your mouth, and all you have to do is dip in some chips, crackers, bread, or veggies, and voila! You’re in dip heaven.
Now, I know you might be thinking, “Tomatoes and cheese, that’s been done before, where’s the novelty?” But hold on, my friend, the goat cheese brings a whole new level of sophistication to the party. It’s like the handsome guy at the bar who knows how to shake a martini – it elevates the game. See what I am doing here?
But, here’s the real kicker, this dip is not just for dipping, it can also be used as a spread on your favorite sandwich, or even as a sauce for your pasta. Remember that video that went viral over pasta, tomatoes, and feta cheese on TikTok? This is almost the same thing. While I haven’t tried this on pasta, I am pretty sure it’ll taste wonderful! Yup, you heard it right, now your pasta can party too!
With only a few ingredients, this recipe is fairly easy and quick to make. Here’s how I put it all together.
Prepare a small baking dish with 1 tbsp of Extra Virgin Olive Oil. Rinse 1 pint of grape tomatoes and slice each tomato in half. Lay them on the bottom of the dish. Season with sea salt, black pepper, garlic powder, basil, Italian seasoning, and minced garlic. Mix well, making sure tomatoes are well coated with all this goodness.
I used my air fryer for this recipe. Feel free to bake this in the oven if need be. Air fry at 400℉ for 7 min. The olive oil will begin to sizzle permeating an aroma of roasted garlic and basil throughout your kitchen! Trust me, this is the exciting part.
After 7 minutes remove from your air fryer and add the goat cheese. Break it up into pieces and crumble it all over the tomatoes. Place back in the air fryer for an additional 4 minutes. Remove from the air fryer. Using a spatula, or any other utensil of your choosing, mix cheese and tomatoes until it’s all blended. Get ready to spread this dip on some crackers or a freshly cut baguette!
So, what are you waiting for? Grab some ripe tomatoes, and a block of goat cheese, and let’s get dipping! (Or spreading, or saucing, the options are endless!)
Tomato and Goat Cheese Dip is a flavor combination made in heaven and will have you saying “Bye-bye boring snacks, hello delicious dips!”
P.S. If you need further convincing, just remember, it’s even better than sliced bread!
Additions
You can add a few extra ingredients to change this up a little bit like some shallots or artichokes. Drizzle a little bit of balsamic glaze over this dip to sweeten this recipe if desired.
You can also serve this dip with Naan bread, garlic bread, pita bread, and all sorts of crackers.
This recipe is great for serving 3-4 people. If you are entertaining a larger crowd feel free to double, triple, or even quadruple the recipe!
