Gourmet roasted chicken-style lunch.
I love me some NAAN bread! It is so good and there are so many things you can do with NAAN! The possibilities are endless!
You can throw this together in about 15 minutes for a quick and healthy lunch or dinner or an in-between snack. This is also easily adaptable, and you can change it up with some of your favorite ingredients. I love chicken and lettuce, but sometimes get tired of eating salad all the time so, I like to change it up every so often. I buy a rotisserie chicken at my local supermarket often. It saves me time and why not make life a little easier? 😉
Chicken
You can use a rotisserie chicken, make your own roasted chicken, or cook up some chicken breast, chicken thighs (my favorite), or any other part of the chicken that you enjoy! You can chop it or shred it into pieces, or just slice some pieces if you desire.
Lettuce
Use any type of greens for this recipe. Spinach, Romaine lettuce, a Spring mix, Kale and so much more. I used Romaine lettuce because it’s what I had in my refrigerator, and it was already washed and ready to go.
Cheese
I am such a big cheese lover. It’s one of my guilty pleasures and I always have all kinds of cheese stored in my fridge. I happened to have Montchevre Cranberry Cinnamon Goat Cheese and let me just say that it blended so well with the rest of the ingredients incorporated in this recipe. The sweetness of the cranberry really made it delightful! I was pleasantly surprised! Any cheese would tie in really well with this! Have fun exploring!
Sauce
Now, for this part, any sauce will do! Whatever dressing you love or have stored in your fridge, or if you make your own, will work beautifully with this meal. I used a sauce that I recently bought and fell in love with. It’s called Nando’s Perinaise Tangy & Fiery Hot Mayo. It is spicy and tasted delicious with this!
Feel free to use any sauce, Ranch, Italian dressing, Balsamic Vinaigrette, Chipotle, Tzatziki Sauce, Hummus, etc.
Nuts
Pecans and Cashews are my favorite type of nut. You can roast them in a frying pan to enhance their flavor. Just toss them in a pan on low heat and roast until golden brown and smell the aroma permeate throughout your home! They become super fragrant and flavorful. Just be careful because they can burn very quickly! 😉
Use whatever type of nut you enjoy! Walnuts, almonds, etc.
Tip of the Day
A great tip to store your nuts is keeping them in the freezer. An airtight container or Ziploc bag will work just fine. Nuts tend to go rancid if kept out for too long, even though they have a long shelf life. I freeze them and whenever I need some, I take them out, roast them up and it brings them back to life!

Rotisserie Chicken and Goat Cheese on Mini NAAN
Ingredients
- 1 rotisserie chicken
- 2 Mini Naan
- 1 cup Shredded lettuce any kind
- 1/2 cup Cranberry Goat cheese crumbled
- Chipotle sauce or any sauce
- 1/4 cup Nuts any kind
Instructions
- Shred rotisserie chicken, any part will do.
- Shred lettuce of your choosing.
- Toast NAAN until golden brown, or as toasty as you would like it.
- Layer chicken, lettuce, goat cheese, nuts and sauce of your choosing.
- Bom apetite! Enjoy this deliciousness.
