A one-pot wonder! Super flavorful, quick, and easy to make for those nights when you don’t have extra time.
How many of us need these quick one-pot wonders on nights when time is limited? We’re running around, getting through our days; many of us with little ones. Sometimes we don’t have extra time, and just need a quick meal that will feed our families. This is one of those meals.
You only need a few ingredients to fill up your skillet. It is packed with flavor from those juicy bell peppers, smoked sausage, and aromatic jasmine rice. It all comes together so easily and quickly.
My family loves rice. I always make sure that I am stocked with lots of rice and pasta in my pantry. These two staples are super versatile and can be made in a number of ways.
I like starting off this dish by sauteing my sausage first. I love the smokiness of sausage and the aroma that permeates throughout my home when I am cooking it. Getting the sausage browned and caramelized allows for the sausage to release its flavor into the skillet and marry its flavors with the rest of the ingredients in this recipe.
After sauteing the sausage, remove it from the skillet and add in the rest of the ingredients except for the rice and chicken stock. You will add these last. Sauté your vegetables with a little bit of extra virgin olive oil to capture the flavor of the sausage. Keep cooking until the onions are translucent.
I love jasmine rice. Any long-grain rice will work great for this recipe. Long-grain rice holds its shape and doesn’t fall apart very quickly. Using short-grain rice or medium-grain rice may allow for this recipe to become a little mushier as the rice binds together more. Long-grain rice will become fluffier and create a drier texture which works really great for this kind of recipe.
A great tip with this recipe is to make sure that you cover your skillet or pot with a lid to allow for the moisture and steam to really help cook the rice completely through. I always place a lid on my pot when I cook rice. I tried leaving my skillet uncovered while cooking this recipe once, and I will be honest and say that it was a big mistake. The rice did not cook thoroughly, and I was super disappointed. The water or stock will evaporate more quickly and will leave the rice very grainy and uncooked. If your pot doesn’t have a lid, aluminum will work just as well.
Let’s talk sausage! You can use any type of sausage for this recipe: kielbasa, smoked sausage, andouille sausage, and many others are packed with flavor and will blend very well with this recipe. So, feel free to use whatever your heart desires!
Once your meal is cooked. Turn off the heat and let sit with the lid on for about 5-8 minutes. The steam in the pot will continue to cook the rice to a fluffy texture.

Simple and Delicious: Easy Savory Sausage and Rice Recipe
Ingredients
- Ingredients
- 2 tbsp of Extra Virgin Olive Oil
- 2 red bell peppers or any of your choosing
- 1 cup of carrots diced
- 1 medium onion diced
- 3-4 garlic cloves chopped
- 1 cup of peas frozen or fresh
- 2 cups of rice long or medium grain
- 1 12 oz package of sausage kielbasa or any other smoked sausage, sliced
- 2-3 tbsp of tomato paste
- 32 oz 4 cups chicken or vegetable stock
- ½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Fresh parsley chopped to garnish
Instructions
- In a cast iron skillet, over medium-high add olive oil. After olive oil begins to heat up, add sliced sausage until browned on both sides. Remove from heat and set aside.
- Add diced peppers, onion, garlic and carrots and sauté until onion becomes translucent.
- Return sausage back into the skillet with peppers, onions, garlic and carrots.
- Add 2 cups of rice, mix well and let sauté 3-4 minutes until rice starts to look a little toasty. Add in seasonings and tomato paste. Mix well.
- Pour 4 cups of broth and add in peas. Mix well. Cover skillet. If you have a lid for your skillet, place it on there now. If not, cover your skillet with aluminum foil tightly.
- Place heat on low and let simmer until broth is completely absorbed. About 10-15 minutes.
- Turn heat off and let sit for 5-8 minutes with lid still on to let rice completely cook.
- Garnish with chopped parsley.
- Serve with a garden salad if you would like.
