
One of my quickest and easiest meals to make is this right here, Drumsticks and Potatoes. You can’t go wrong with this recipe and my family loves it. The best part is kids love chicken drumsticks too! They hold onto flavor really well and bake nice and golden brown. Put them in an air fryer and you will thank me later!
I love the simplicity of it all and how quick and inexpensive this recipe is to make.
Chicken
You could essentially use any part of a chicken for this recipe: breast, legs, thighs, wings. I personally like the darker meat and will typically use drumsticks or thighs, boneless or bone in.
Purchase your drumsticks from anywhere that you prefer. A local supermarket, butcher, etc. Organic or not, I won’t judge! 😉
Oils
Drumsticks get their enhanced crispiness from the oils you put on them. Extra Virgin Olive Oil, Avocado Oil, Grapeseed Oil, Canola Oil are more neutral flavored and tolerate heat fairly well. You want a heat that will be able to tolerate high cooking or baking temperatures. The best oils to use are the ones that are not heavy in flavor such as Coconut Oil, butter and even Olive Oils. Unless, you want to add those flavors, then you do you! 😉
Seasonings
Different types of spices will help enhance flavor in these drumsticks. You can marinate them the night before or right before you place them in the oven. If you’re trying to save on time, then plan ahead and marinate.
I love bringing together spices in a bowl and let it sit and marry one another. Fresher herbs are an absolute great addition to this recipe as well. The fresher the herbs the more these flavors become enhanced. But if you don’t have fresh herbs then dry herbs work fine too.
Vinegars
Balsamic vinegar gives this dish an added element that makes this chicken fabulous and delicious. Balsamic vinegar adds a yummy caramelization to the skin when baked on a high temperature. It is dark, concentrated and intensely flavored.
Baking
Bake these little legs with potatoes at 400℉ for about 40-45 minutes. You don’t want to overcook the chicken, or it will become dry and chewy. Bake uncovered for an added crispiness. The internal temperature should reach 165℉. Anything over that and they will become overcooked.
Air fryer
If you have an air fryer and can fry your chicken in there, then I say go ahead! Season the chicken the same way mentioned below in my recipe and bake at 400℉ for 20-25 minutes or until internal temperature reaches 165℉. Using an air fryer is great for chicken, but since I am feeding my family, I like to bake all this food in my oven on a baking dish. If you’re cooking just for yourself or for two people and can fit it all in your air fryer, then enjoy putting this together. If you want just drumsticks for dinner with a side salad the air fryer is great to use too. It definitely makes the chicken extra crispy especially with the skin on.
Vegetables
This dish is great because it is also versatile and can be changed up in so many ways. You can add all kinds of vegetables such as Brussel sprouts, carrots, sweet potatoes, zucchini, eggplant, green beans and so on.
This dish is also great with a side of garden salad.

Oven Baked Balsamic and Ginger Chicken
Equipment
- 1 Deep dish baking tray
Ingredients
- 1 package of drumsticks
- 3 lbs of yukon gold potatoes
- 1 medium onion sliced
- 1 tbsp of fresh rosemary chopped
- 1 tbsp of fresh thyme chopped
- 2-3 cloves of garlic chopped
- 2-3 scallions sliced
- 1 tsp of minced ginger
- 1 tbsp of garlic powder
- 1 tbsp of ground paprika
- 1 tbsp of ground black pepper
- 1 tbsp sea salt
- ½ cup of extra virgin olive oil
- ½ cup of balsamic vinegar
- 1/4 cup fresh parsley chopped
Instructions
- Preheat oven to 400℉.
- Rinse drumsticks and place in an oven safe deep dish or sheet pan.
- Slice onions and lay over drumsticks.
- Peel and cut potatoes into cubes. After rinsing them off, lay them over drumsticks and onion.
- In a bowl, combine all ingredients: herbs, garlic, scallions, seasonings, olive oil and vinegar and mix well.
- Pour this mixture over your drumsticks, onions and potatoes and mix making sure that everything is coated well.
- Place in the oven and let cook for 40-45 minutes, or until internal temperature reaches 165℉.
- Serve alongside a salad or veggies if desired.
