This is one of the go-to meals that I love to make. It’s easy, quick, and a family favorite! I make it all the time and it never disappoints!

Pork chops are a popular and delicious cut of meat that comes from the loin of a pig. They are typically bone-in or boneless and are often pan-fried, grilled, or roasted. Pork chops are known for their juicy and tender texture, with a slightly sweet and savory flavor that pairs well with a variety of seasonings and sauces. They can be served as a main dish alongside vegetables or potatoes, or sliced and used in sandwiches or salads. Pork chops are a versatile and easy-to-prepare protein that is enjoyed by so many.
Cream Sauce
If you’re anything like me then you’ll appreciate a good ole cream sauce recipe. Dijon cream sauce is a classic accompaniment to pork chops due to its rich and tangy flavor profile. The creaminess of the sauce helps to balance out the lean texture of the pork chops, while the tanginess of the Dijon mustard cuts through the richness of the cream, creating a well-balanced flavor.
The sauce can be made by combining Dijon mustard with heavy cream, butter, and seasonings such as garlic and thyme, creating a luxurious and flavorful sauce that elevates the flavor of the pork chops.
If heavy cream is not your thing, or if you’re looking for a more healthy alternative, canned coconut milk is a great addition to this sauce that adds an extra touch of flair. Simply replace the heavy cream with a can of coconut milk and let the magic begin.
Mushrooms
If you’re a mushroom lover like me, then you can appreciate adding mushrooms to this flavorful dish. Portobello mushrooms are a delicious addition to a cream sauce and pork chops dish. Their meaty and earthy flavor adds depth and complexity to the dish, while their chewy texture complements the tender texture of the pork chops. When cooked in a cream sauce, the portobello mushrooms absorb the flavors of the sauce, creating a rich and savory flavor that enhances the overall dish.
Herbs
Adding herbs to a pork chop and cream dish is a great way to enhance its flavor. Herbs such as rosemary, thyme, and sage pair particularly well with pork and can add a depth of flavor that complements the richness of the cream sauce.
These herbs can be added to the dish in various ways, such as seasoning the pork chops before cooking, sautéing them with the onions and garlic, or adding them to the cream sauce towards the end of cooking. Using fresh herbs is recommended, as they tend to have a more robust and flavorful aroma compared to dried herbs.
For this recipe, I used thyme and rosemary which are my favorite and go-to herbs. Herbs de Provence, which is a combination of many different herbs including thyme, oregano, summer savory, rosemary, fennel, bay leaf, chervil, basil, and marjoram, is also a great seasoning for pork.
Ginger
Me and ginger have a love-hate relationship. I love it in food and absolutely love it with Sushi, but I don’t really enjoy it in a drink. I know it sounds crazy, but what can I say, sometimes I’m complicated LOL!
Incorporating minced ginger in this pork and cream sauce dish can add a delightful zing and depth of flavor to the overall dish. Ginger’s sharp, slightly sweet, and spicy taste pairs well with this rich cream sauce. When using minced ginger, it is essential to add it at the right time to avoid burning it, which can lead to a bitter taste. The ginger can be added to the cream sauce before simmering.
Tips:
- For a healthier option, you can use low-fat milk instead of heavy cream, or a can of coconut milk as I mentioned earlier, but keep in mind that the sauce won’t be as thick and creamy.
- If you want a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water) to the skillet and stir until the sauce thickens.
- Add the mixture to the sauce: Gradually pour the cornstarch mixture into the cream sauce while whisking continuously. Be sure to add the mixture slowly to avoid clumping. Continue to whisk the sauce until it comes to a simmer. The heat will activate the cornstarch and cause the sauce to thicken. Simmer the sauce for a few minutes until it reaches the desired consistency.
- If you want to add some extra flavor to the dish, you can sprinkle some grated Parmesan cheese on top of the pork chops before serving.
- For extra flavor, you can marinate the pork chops for 30 minutes to an hour before cooking or overnight.
- To ensure that the pork chops are cooked through, use a meat thermometer to check the internal temperature. The temperature should be at least 145°F (63°C) before serving.

Creamy Dijon Pork Chops
Equipment
- 2 skillets
Ingredients
- 8 boneless pork chops
- 6 Portobello mushrooms sliced
- 1 small onion sliced
- 2-3 garlic cloves minced
Seasonings
- 1 tbsp of paprika
- 1 tbsp of garlic powder
- 1 tsp of ground black pepper
- 1 tbsp of sea salt
Cream Sauce
- 1 cup of heavy cream
- 1 tsp of fresh thyme chopped
- 1 tsp of fresh rosemary chopped
- 1 tbsp of dijon mustard
- 1 tsp of whole grain homestyle mustard
- 1 tsp of minced ginger
- 1 tsp garlic powder
- 1 tsp of ground black pepper
- 1 tsp of paprika
- 1 tsp of sea salt
- 1 tbsp of fresh parsley chopped
Instructions
- Begin by seasoning the pork chops with paprika, garlic powder, ground black pepper,salt and set aside.
- Wash mushrooms, pat dry and slice.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops to the skillet and cook for about 4-5 minutes on each side or until golden brown.
- In a separate skillet, saute mushrooms and onions. When onions become translucent, add in heavy cream and the rest of the ingredients listed above. I used my Blackstone grill to make this because it was easy and I love to cook outdoors.
- Bring the mixture to a simmer and let it cook for about 5 minutes, or until the sauce has thickened.
- When pork chops are cooked, and cream sauce is brought to a boil, place everything on a serving dish.
- Serve with a side of rice, pasta or mashed potatoes alongside a salad or roasted vegetables.
