Banana Nut Bread
Equipment
- 1 9-10" Bundt Pan
Ingredients
- 3 cups of all-purpose flour
- 1 cup of sugar
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1 tsp of salt
- 1 tsp of ground cinnamon
- 1 tsp of ground nutmeg
- 4 eggs
- 1 ⅓ cup of any cooking oil
- 1 ½ tsp of vanilla extract
- 1 cup of crushed pineapple 8 oz
- 2 cups of mashed ripe bananas
- 1 ½ cups of walnuts chopped
Instructions
- Preheat oven to 375℉.
- Grease a bundt pan with butter. Set aside.
- In a large mixing bowl, combine all dry ingredients: flour, sugar, baking soda, baking powder, salt, cinnamon and nutmeg.
- In separate bowl, combine wet ingredients: eggs, oil, vanilla extract, pineapple, and bananas.
- Combine wet ingredients into bowl with dry ingredients and mix well.
- Using a spatula fold in chopped walnuts.
- Fill bundt pan with this batter.
- Bake for 60 minutes or until inserted toothpick comes out clean.
- Remove from oven and let sit until warm.
- Remove Banana Nut Bread from bundt pan and let sit on a cooling rack until room temperature.
- Place on a dish and sprinkle with confectioners sugar.
- For a different topping, mix ½ cup brown sugar, ⅓ cup all purpose flour, ¼ cup butter, cubed and 1 tsp of ground cinnamon. Mix well and sprinkle over batter before baking.
