
Attention all foodies and chicken lovers! Get ready to cluck with excitement because I’ve got a real treat for you today. Introducing my Garlic Buffalo Chicken Sliders – the latest addition to the “finger-lickin’-good” club.
Here is another great game day recipe to impress your guests and tantalize their taste buds! These sliders are a perfect combination of bold flavors, juicy chicken, and delectable toppings. The key to elevating the taste of the chicken is the use of garlic, onions, and delicious melting cheeses of your choosing, which adds a depth of flavor that is unparalleled. And let’s not forget about the garlic buffalo sauce – it’s a balance of tanginess and heat that brings these sliders to the next level.
Perfect for game day, a backyard barbecue, or even a Netflix binge session, these sliders are a true crowd-pleaser.
Here’s how I make this recipe!
I love boneless, skinless chicken thighs. I think they are juicier and packed with lots more flavor. If you prefer chicken breast then feel free to use that for this recipe. Chicken sliders are great to make and super versatile. Who doesn’t like a good sweet roll smothered in cheesy, saucy, and protein-filled goodness? If you’re looking to save time, you can buy a rotisserie chicken at your local supermarket. I’ll explain how to use that below.
Season raw chicken with salt, black pepper, paprika, garlic powder, red pepper flakes (optional), parsley, garlic buffalo sauce, and Extra Virgin Olive Oil. Place in a baking dish and air fry, or bake in an oven, at 400℉ for 30-35 minutes. Make sure to flip chicken pieces halfway through so they don’t burn and get an even golden brown bake all around. These chicken thighs will be packed with flavor and infuse your home with a deliciously garlicky aroma. I use Steve’s & Ed’s Garlic Buffalo Wing Sauce. (I am not sponsored by them).



While the chicken is baking, prepare 1 pack of King’s Hawaiian Orginal Hawaiian Sweet Rolls, 12 counts (I am not sponsored by them) by cutting it in half. Place it in a 9×9 baking dish lined with parchment paper. Parchment paper will help from it sticking to the baking dish. Slice one large onion and garlic cloves. Sauté in a skillet with salt, black pepper, red pepper flakes (optional), and parsley on medium heat until the onion is translucent. Set aside.



In a small bowl, melt 4 tbsp of butter and add the rest of the ingredients: minced dried onion, Worcestershire sauce, dijon mustard, poppy seeds, and parsley.
When the chicken has been baked, remove it from the air fryer or oven and let sit for 1-2 minutes. On a cutting board, chop chicken thighs into small pieces.



In your prepared pan with parchment paper, layer the bottom half of the sweet rolls with chicken, then layer the onions and garlic. Add shredded cheeses of your liking. Smother it as much or as little as you’d like. Add roasted peppers and place the top half of the rolls on top. Cover the baking dish with aluminum foil and place it in the air fryer or oven to bake at 350℉ for 20 minutes.
Remove the foil and using a basting brush, brush all the buttery gooiness all over the top of the buns. Place back in the air fryer or oven and bake for an additional 5 minutes or until golden brown. Don’t make the same mistake I made. I left it in there a minute too long and they got a little toasty! Hey, what can I say? I too, make mistakes!




Using a Rotisserie Chicken
To save some time, a rotisserie chicken is great. The steps are very similar to what I mentioned above. The only difference is to pull apart the chicken and shred it. After sautéing the onions and garlic, place the shredded chicken in the same skillet and let sauté for a few minutes to marry all the ingredients and add the garlic buffalo sauce (add as much or as little as you’d like). Mix well for a minute or two and set aside.
Remove sliders from oven and top with grated parmesan cheese. The more the merrier!

How to Make Easy Garlic Buffalo Chicken Sliders
Equipment
- 1 Air fryer or oven
- 1 sheet of parchment paper
- 1 9×9 Baking dish
- Aluminum foil
- 1 basting brush
Ingredients
- For the Chicken
- 1 pack boneless skinless fresh chicken thighs, 2.5 lbs
- ½ tsp sea salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ½ cup of garlic buffalo sauce
- 2 tbsp of Extra Virgin Olive Oil
- Condiments
- ½ cup of shredded gouda cheese
- ½ cup shredded gruyere cheese
- 4-5 roasted red peppers canned and sliced
- 1 large onion sliced
- 4 garlic cloves minced
- salt, black pepper, red pepper flakes (optional)
- 1 tbsp parsley dried or fresh
- Butter Topping
- 4 tbsp butter melted
- ½ tbsp dried minced onion
- 1 tbsp Worcestershire sauce
- 1 tbsp dijon mustard
- 1 tsp poppy seeds
- ½ – 1 cup grated parmesan cheese
- 1 tsp parsley fresh or dry
Instructions
- Chicken Preparation
- Preheat oven or air fryer to 400℉.
- Prepare a baking dish by drizzling some olive oil on the bottom of the baking dish.
- Prepare chicken thighs by removing excess fat and layer pieces flat onto the bottom of the baking dish.
- Season with salt, ground black pepper, garlic powder, paprika, buffalo sauce, and olive oil.
- Mix well, making sure the chicken is evenly seasoned.
- Bake for 30-35 minutes.
- Half way through, flip the chicken thighs to get an even bake on both sides.
- When chicken is cooked all the way through, chop it into smaller pieces as thinly or as chunky as you would like. This is a personal preference.
- Set aside.
- Sliders
- Line a 9×9 baking dish with parchment paper.
- Take the entire loaf of sliders and cut it in half. Be careful not to let buns fall apart. It’ll be easier to put together if it remains 1 whole piece.
- Prepare a frying pan with olive oil. Slice one large onion and mince 4 cloves of garlic, and sauté on medium heat
- Sprinkle some dried seasonings on onion and garlic: sea salt, black pepper, red pepper flakes (optional) and parsley.
- Sauté until onions become translucent.
- Set aside.
- Bringing it all Together
- Preheat oven to 350℉.
- Take cut-up chicken and layer it on the bottom half of your rolls.
- Then, take onions and layer them on top of the chicken.
- Layer cheeses, and then roasted red peppers.
- Lastly, cover with the top half of the loaf.
- Take a sheet of aluminum foil and cover the sliders completely.
- Place in oven and bake for 15-20 minutes.
- Butter Topping
- In the meantime, melt 4 tbsp of butter in a small bowl. Then, add the remaining ingredients: dried minced onion, Worcestershire sauce, dijon mustard, poppy seeds, and parsley.
- Mix well and set aside. If butter begins to harden, throw it in the microwave for a few seconds or wait to do these steps right before the chicken is almost done.
- Remove chicken from oven after 15-20 minutes, and remove aluminum foil.
- Using a basting brush, take melted butter and other ingredients and smother the top of the buns as much or as little as you’d like.
- Place back into the oven and let bake for another 5 minutes or until golden brown.
- Don’t do it like me, and forget about them and let them burn a little.
- Set a timer, it helps!
- Remove from oven and sprinkle some grated parmesan cheese and see it melt away, let sit for a minute or two and then cut into little squares!
